I personally pick one that the game can actually achieve 90% of the time. A fluctuation of 10 or 15FPS is fine for me. But the game doing 50FPS jumps depending on where I am in the game and where I'm looking at is not OK for me.The higher your FPS gets the less important that is though. A fluctuation between 250 and 300FPS is fine. Who cares. But the game jumping between 90 and 140FPS is just annoying for me. So for such a game, I'd cap to 100FPS.
